Collateral is anything worth of value. For example, jewelry such as gold rings, diamonds, collatable coins, high end purses, property, etc. The collateral is held until the bond is exonerated and the premium has been paid in full. Collateral is not always needed.
The Cosigner is a person who agrees to be financially responsible for the person they are bonding out. They can be responsible for the full amount the bond and bounty hunter fees if the defendant fails to appear to all court dates.
